Prosciutto Wrapped Asparagus


Be the potluck star with this simple and ADDICTING side dish!


oven to 400

what you need

1 bunch of asparagus

1-2 packs of nitrate free prosciutto (trader joe’s!)

wash, snap & dry

one bunch of asparagus – For asparagus newbies: this means grabbing a few asparagus at a time and literally breaking the ends off, the last 2-4” will naturally just snap off (those are the chewy stringy ends)

roll & wrap

grab a few asparagus (2-3 if they’re thick asparagus, 4-6 if they’re thin) and set on the edge of a slice of prosciutto. Wrap the end over the bunch pulling a little tight and roll the bunch up in the slice. Sometimes my prosciutto is a little dry and starts breaking, not to worry, just keep tucking/wrapping those dry pieces in and it will still turn out great!

line them up

in a glass baking dish


for 10-15 minutes. Check after 10, you’re looking for asparagus to be bright green and heads slightly crisped, and prosciutto browned. Do NOT over-bake!

optional final step

flip the bunches over and bake for an additional 3 minutes or so to brown the flip side of the prosciutto.
