Sunflower Seed Butter (sugar-free)

 

I love nut butter. Apples and nut butter were my go-to pregnancy snack and my go-to toddler snack. Lately I’ve been nut-free in attempt to heal my stomach and eliminate any possible triggers but this has led me desperate for a substitute for a friend to my dear apple slices. Store bought sunflower seed butter usually is sweetened with sugar so also not ideal. I whipped out the food processor and came up with my own version- boosted with extra flavor. Good luck not eating it by the spoonful, sorry apple slices, I don’t even need you anymore.

In a Food Processor:

1 lb roasted, unsalted sunflower seeds

1/4 C coconut oil

Process until smooth and silky – at least 3 minutes

add in:

1 t cinnamon

1 t vanilla

1/4 t salt

1/4 c raw honey

Once honey is added, the butter will start to clump, don’t fret just keep processing until fully mixed in and smooth. Scoop into your mouth, leaving some left to put into a jar and store in the fridge!
