Lip Smackin’ Gumbo

I LOVE GUMBO
Thick, hearty, hot, a little spicy, okra, melty sauce…. mmmm!

GET SOUTHERN

how to make a good ol’ rue:

1/4 C Grass Fed Butter OR Grapeseed Oil

1/4 C Quinoa Flour

On med low heat, whisk these two ingredients until the color turns mediu brown and the smell is so incredible that you just can’t handle it anymore,

TOSS IN

A medium-large Yellow Onion (chopped)

A Green Bell Pepper (chopped)

2-3 Stalks of Celery (chopped)

SAUTE

for 15 minutes

ADD

1 lb. Sliced Cajun Andouille Sausage (Nitrate, Antibiotic and Hormone-Free) till slightly browned

1 Can Diced Fire-Roasted Tomatoes

2 Cups Chicken Broth

1/2 Bag Frozen Okra

2 Free-Range or Pastured Chicken Breasts sliced in 1/2″-1″ chunks (raw) 

1 t salt

1 T thyme

1 Bay Leaf

COVER

and let simmer for 20-30 minutes

TASTE

Add cayenne to make it more spicy if you like

SERVE

over Cauliflower Rice, Quinoa, or Brown Rice
