This is a great alternative to a sandwich or tortilla wrap! It’s highly versatile and you can really put anything in it you want. Below is a sample recipe but feel free to fly with creativity!
4-6 large Collard Green leaves (2 servings)
with a sharp knife, cut out the large/thick part of each leaf stem
2-3 leaves, slightly overlapping
in the ‘overlap’ middle smear your favorite spread (mustard in this one)
Sliced Roast Turkey
Thinly Sliced Cucumber
tightly, but carefully and chop in half and serve along side Kiwi, Pineapple for a sweet side, or homemade guacamole or hummus and chopped celery/carrots for a savory side.
