Tigernut Flour Cookies (gluten-free, nut-free, vegan)

 

“What on EARTH is a Tigernut?!,”  I am sure you are asking. It is actually a small root vegetable. So yes, it’s come to this- eat your vegetables can now mean EAT YOUR COOKIES. You’re welcome, Cookie Monster. These cookies are not only grain free, but nut free too, so even some of the pickiest tummies can indulge in some cookies.

Recipe adapted from Gemini, the brand that sells Tigernut flour on Amazon, flour is also sold on Vitacost.

Mix

1 egg (or flax-egg)  

1/2 C Tahini (sesame seed paste) 

1/2 C Tigernut Flour

1/2 C Maple Sugar

1 t baking powder

1 t vanilla  

pinch of salt  

stir in

1/4 C enjoy life chocolate chips  

spoon

onto a parchment or silpat lined cookie sheet in tablespoons, at least 2″ apart and bake at 350 for 14 minutes till golden brown on the edges.

When cookies are fresh out of the oven, sprinkle lightly with some sea salt flakes – fleur de sel! 

cool on pan 10 minutes then transfer to a wire rack to completely cool
